La Petite Maison's Bikini – The Method

We present a home-style take on a beverage found on our latest menu. It's a party-sized pre-mixed that's bursting with the flavours of the Christmas time, making it ideal for your festive gathering. Save the extra syrup to use in morning drinks, sweets, or to make additional servings of the drink.

Bikini

Yields 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Citrus Syrup: Combine all the ingredients in a saucepan, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the stove and leave to cool down fully. Pour into a sealable bottle, seal keeping it chilled, it can be stored for up to a month.

Preparing the Cocktail Base: Mix every spirits and syrup into one sizeable container, let it rest for an hour, then pass it through best through cheesecloth, to ensure it's fully clarified.

When ready to serve: Measure 85ml from the batch mix to a mixing glass filled with ice, and agitate gently for about 60 seconds to chill. Pour into a frosted cocktail glass or a similar vessel, decorate with some cranberries and complete it with a quick spritz of the essential oil over the drink.
